Looking for a way to enjoy the delicacy of pâté, but without consuming an animal? This vegan pâté recipe is a refined take on more traditional pâtés while still serving the same delicious purpose.
New to the idea of pâté? You can spread it on bagels for a casual lazy breakfast, serve it with artisan bread, or pair it with crackers for a party appetizer for a holiday or Christmas party. This mushroom pâté is packed with incredibly savory flavors and surprisingly easy to make!
Let me just say that I never expected pâté to be my thing. I don’t like meat, and the idea of it blended on a cracker just doesn’t appeal to me at all, and this turned out to be one of my favorite things ever.
To all those that may not like this idea because they dislike mushrooms, please note that my fiancé, who gags instantly at the texture of any mushroom, devoured this spread, so that is a massive win in my books for anti-mushroom people!
Ingredients
5 tablespoons vegan butter, divided
8 ounces cremini mushrooms, cleaned and sliced
1/2 cup chopped yellow onion
4 garlic cloves, minced
1 tablespoon dried rosemary
1 cup chopped walnuts
2 teaspoons white truffle oil
1 teaspoon salt, or to taste
1 teaspoon black pepper, or to taste
Directions
1. In a large saucepan, melt 2 tablespoons of butter and add the mushrooms
2. Cook the mushrooms on medium heat for 5 minutes
3. Add the onion and 2 more tablespoons of butter and cook for 5 to 6 minutes, until soft
4. Add the minced garlic, remaining butter, and dried rosemary to the pan and let the mixture simmer for about 5 minutes, until most of the liquid has cooked off, then remove the skillet from the burner
5. Let the mixture cool for a few minutes while you gather the remaining ingredients
6. Transfer the mushroom mixture to a blender or food processor
7. Add the walnuts, truffle oil, salt, and pepper
8. Blend the mixture until it’s as smooth as you like it — anywhere from coarse and chunky to a very smooth paste
9. Serve immediately with bread and/or crackers, or place in the refrigerator to chill for later, and enjoy!
