What I Eat In A Day - Vegetarian Version!


Good morning loves! Back in the beginning days of blogging, there used to be a thing called “What I Ate Wednesday” where food and fitness bloggers would write a diary-style post going through their day and everything they ate. Now suitable, it's Wednesday and I know It's been a cool minute since I posted a "What I Eat" article, so I don't want to keep you up here, why don't ya'll go ahead click "Read More" and scroll on down 😘

All day, every day I am consuming coffee as if I were a Gilmore Girl. But who's complaining? I call that a compliment 😉 Take a trip to Elaine's Coffee Call in Hotel Lincoln for this delicious Lavender Latte. 


These pancakes were made from only three ingredients - Banana, Egg, & Peanut Butter! Mash the banana until it's a "paste" and then mix the egg, and peanut butter together with the banana and VOILA! You've got yourself vegetarian, no carb, pancakes! I made them over and over again and even for Nick's birthday in February, he loves them!



I have a thing for smoothie bowls, something about being able to eat my thick and creamy smoothie with a spoon makes me so happy! This one is super easy to make - acai base, banana's, granola, coconut flakes, and berries! YUM! 



I made for Instagram LIVE and boy everyone loved this recipe! It's super yummy, healthy and vegan! It's made of gluten free rice noodles, cucumbers, sliced carrots, green onions, nut butter (I used almond butter), coriander, and sprinkled peanuts on top! 


This was a fun and simple lunch I had at work. It consisted of shaved brussels sprouts, chopped spinach and arugula, red onions, cucumber, orange sweet peppers, and radishes. I drizzled this with my homemade green goddess dressing too! 


OK, so I didn't maaaake this but I HAD to share the most amazing ramen I've had in the entire Chicago metropolitan area! Not only is this Vegetarian Ramen but the noodles are GLUTEN FREE GUYS AND THEY'RE SO DAMN DELICIOUS! Go to Kiuzuki in New City for it!


MMM that berry fruit tart 😋 gotta love French cuisine, am I right?!


I have been drinking a lot more tea lately because it either is helping me sleep or I need something to relax my mind and let me recharge. Coffee is more of my "wake up let's get things rolling" mood where as tea is more of my "I'm going to take it slow today and enjoy the view".


However I've been in a chai tea mood recently too! I was blessed enough to partner up with Sherpa Chai and boy I love drinking it on the weekends to have a great start to the day! The best part of this company is that the recipe comes from the founder's mother. WHAT. He's amazing. So go check out the company and buy some of their amazingly delicious Chai Tea!

    1. They reeeeeally are! You can also add in chia seeds or flax seeds for a metabolism boost, or chocolate if you're feeling sweets :)
