Lemon Broccoli Chicken Pasta - Organic On A Budget!

Bonjour, mes chéris! Monday again, oh what fun will this week bring upon us!? Over the weekend I got to relive my middle school years by going to an alternative concert with the line up being The Devil Wears Prada, Falling In Reverse, Papa Roach, & A Day To Remember (AD2R)! I fangirled so hard when Jeremy McKinnon, lead singer for AD2R, came on stage. I went through a phase in my younger years where I was a “Scene” kid and basically lived my life listening to these bands all day long – LOL. On Sunday however I came back to reality and had a craving for cooking up something organic and yummy for my friends that Nick and I have been staying with. Guys, we only have ONE more day until we get to move into our amazing new apartment! I am so stoked!! I have appreciated and loved staying with our friends so much that I wanted to thank them by cooking up some scrumptious food so last night I made Lemon Broccoli Chicken Pasta. This recipe was the perfect meal for our sunny Sunday we had in Chicago, it is light and refreshing and will most definitely fill you up without making you feel like you ate your weight in pasta!

Since we’ve been couch surfing we don’t really have any food items so when thinking what to make I had to find something that doesn’t use any miscellaneous ingredients, and something that I can use again so no food goes to waste. So I went to two different grocery stores, Trader Joes and Target. I bought 99% of what I needed here and bought the spaghetti noodles at Target since I live by their Gluten Free Simply Balanced brand – Fun Fact, I’ve tried many different GF noodles, these are the only ones I can honestly say don’t taste like mush once cooked. Below is my purchases, everything i bought is 100% organic or at least Non-GMO (I lost my Target receipt but the noodles are $1.99 for a package) I literally bought everything I needed for the recipe and my grand total was $24.96!

Lemon Broccoli Chicken Pasta

When I cook I typically love taking my time while listening to Frank Sinatra or Michael Bublé jazz music. I don’t know if that is just me or other people do the same, but I enjoy cutting precisely and placing into glass bowls as if I am a Youtube cooking star LOL!

I used a whole package of chicken tenders from Trader Joes, I find it easier to cut these into bite size rather than cutting chicken breasts, but you can also use that if you wish to! After the chicken had been washed and cut, I honestly didn’t like the idea of using so much oil in a pan so I poured about a tbsp. of oil in a bowl and tossed the chicken in it, along with the seasoning to coat the chicken evenly, cover and place into the refrigerator. I used two whole heads of broccoli, cut off the florets into tiny trees and then shaved off the outer skin of the stem, and cut them into bite size squares. I don’t like to waste any part of food so if it is edible I will use it. I washed the broccoli, tossed with a little olive oil and placed in a bowl to the side. Then I crushed four garlic cloves and chopped them into pieces, placed in bowl and set to the side as well. Lastly, I zested some lemon and mixed it in with freshly squeezed lemon juice.

What I love about this recipe is that it is a one pot meal. First you cook the noodles according to the package, save about ½ a cup of pasta water. Once drained and pasta set aside, add the chicken and cook for 5-7 minutes, then add the garlic for 3-4 minutes, and once fully cooked place the meat in a bowl and set aside. Next sauté the broccoli for about 5 minutes until crispy, you don’t want it to get mushy! Next pour the lemon zest and juice over the broccoli and stir to coat. Lastly, my biggest and only regret from this dish is that I wish I would have tossed the pasta with the chicken and broccoli while also tossing the Parmesan cheese in to melt and make a little creamier. So with that said, combine all ingredients including Parmesan cheese, toss and serve warm! Voila! Itsa Pasta Dishya!


1 package of Trader Joes chicken tender strips
2 small-medium heads of broccoli – florets and stem
4 cloves of garlic
2 tsp fresh lemon zest
1 tbsp. fresh lemon juice
1 package of Gluten Free Simply Balanced spaghetti noodles
½ cup of reserved pasta water
1 tbsp. lemon pepper seasoning
2-3 tbsp. olive oil
1 cup Parmesan cheese + some for garnish

To go hand in hand with my previous post, I wanted to show that you can buy organically or non-GMO on a budget, and feed (4) people a quality dinner, and have leftovers for lunch at the office the next day too! If you are feeding yourself or two people, this could have been another dinner with this amount of food.
